Christmas Breakfast Casserole


  1. 12 Large Eggs
  2. 1 package Fingerling Potatoes (about 1½ lbs)
  3. 8oz Shredded Cheddar Cheese
  4. 1 cup Milk
  5. 6 slices Bacon, chopped
  6. 1lb Mini Bell Peppers, cut into rings
  7. 1/2lb Green Cruciferous Vegetables (Asparagus, Brussels Sprouts, Broccoli, etc)
  8. Garlic powder, black pepper, hot sauce, and/or salt & other seasonings to taste


  1. Preheat the oven to 350 degrees and grease a 9x13” (or similar size) oven-safe dish
  2. Cook the bacon on the stove-top while you prepare other ingredients
  3. Chop potatoes and other veggies into small chunks, and slice the mini peppers
  4. Whisk/blend the eggs and seasonings, adding in milk as you go
  5. Combine all the ingredients (including chopped bacon) in egg mixture and pour into baking dish
  6. Bake in the oven for 30-35min, or until lightly browned on top
  7. Let cool for 5-10min, cut and serve!

Makes 6 Servings: 480 Calories Each
