Ingredients:
- 12 Large Eggs
- 1 package Fingerling Potatoes (about 1½ lbs)
- 8oz Shredded Cheddar Cheese
- 1 cup Milk
- 6 slices Bacon, chopped
- 1lb Mini Bell Peppers, cut into rings
- 1/2lb Green Cruciferous Vegetables (Asparagus, Brussels Sprouts, Broccoli, etc)
- Garlic powder, black pepper, hot sauce, and/or salt & other seasonings to taste
Directions:
- Preheat the oven to 350 degrees and grease a 9x13” (or similar size) oven-safe dish
- Cook the bacon on the stove-top while you prepare other ingredients
- Chop potatoes and other veggies into small chunks, and slice the mini peppers
- Whisk/blend the eggs and seasonings, adding in milk as you go
- Combine all the ingredients (including chopped bacon) in egg mixture and pour into baking dish
- Bake in the oven for 30-35min, or until lightly browned on top
- Let cool for 5-10min, cut and serve!
