Chicken Avocado Salad

The weather this summer in AZ has been absolutely beautiful so far, but we all know it’s about to get hot. Real hot. Through the summer months, it’s tough to want to eat hot food, which is why we wanted to share this simple and delicious healthy recipe that you don’t have to sweat over!Ingredients:

  1. 12oz Chicken Thighs (boneless/skinless)
  2. 1 large Avocado
  3. 2 hard-boiled Eggs
  4. 4 slices of Bacon
  5. 1 cup of canned or frozen Corn
  6. 1 medium Cucumber
  7. 1 7oz container of Grape Tomatoes
  8. ¼ cup Green Onions
  9. 1½ tbsp Dill Weed
  10. Juice of half a lemon or lime
  11. 4 Pitas (about 7” diameter)

Directions:- Some of these items will need to be prepared first and left to cool. To simplify things a bit, you can bake both the chicken thighs and bacon in the oven at 350 degrees for about 25-30 min, flipping them at 20min. - While they’re in the oven, boil some water for the eggs. I find 6-7 min to be the perfect time for boiled eggs, and if you use a spoon to put them in the water, you won’t burn your hand or break the eggs. - When the proteins are finished, throw them on a plate and into the freezer while you prepare the other ingredients. - Your avocado, cucumber, and tomatoes can all be diced and mixed together. Then add the corn, dill weed, and lemon juice. After that, it’s time to cut the proteins from earlier into bite-sized pieces, combine them all together, and enjoy! Depending on whether you’ve seasoned the chicken you may want to add salt, pepper, or other spices to your dish. This tastes delicious on its own, or inside a pita!Makes 4 Servings: 455 Calories Each
