Directions:- In a large bowl, mix the lime juice, seasoning mixture and 1 tablespoon olive oil together. Add the shrimp and toss to evenly coat. Set aside.- In a medium pot, add quinoa with 3 cups water and salt, bring to boil. Cover, reducing the heat to medium-low, and simmer until water is absorbed. - Meanwhile, heat a skillet with 1 tablespoon olive oil. Slice the red peppers and onion, place them in the hot skillet and season with salt and pepper. When the peppers and onions are tender to the touch, add in the marinated shrimp (leave excess marinade in bowl). Cook until shrimp are pink.- Place 1/2 cup quinoa each in 4 bowls, divide shrimp and veggie mixture between the 4 bowls. Top with sliced avocado, chopped tomatoes and shredded cheese.
