Paleo Pumpkin Muffins


  1. 4 eggs
  2. 3 bananas
  3. 1.5 cups (12oz) of pumpkin puree
  4. 3 scoops of vanilla protein powder (Ascent bakes really well)
  5. 3 tablespoons of almond butter
  6. 1 teaspoon of vanilla extract
  7. 1⁄2 teaspoon of baking soda
  8. Cinnamon, nutmeg, and/or pumpkin pie spice to taste

Directions: 1. Preheat the oven to 375 degrees 2. Combine bananas, puree, and almond butter until well mashed 3. Mix in protein powder, then eggs, then the remaining ingredients 4. Pour into a greased (use butter, not Pam) muffin tray 5. Bake for 13-15min (until you can poke with a toothpick and it comes out clean)
