Ingredients:
- 4 eggs
- 3 bananas
- 1.5 cups (12oz) of pumpkin puree
- 3 scoops of vanilla protein powder (Ascent bakes really well)
- 3 tablespoons of almond butter
- 1 teaspoon of vanilla extract
- 1⁄2 teaspoon of baking soda
- Cinnamon, nutmeg, and/or pumpkin pie spice to taste
Directions: 1. Preheat the oven to 375 degrees 2. Combine bananas, puree, and almond butter until well mashed 3. Mix in protein powder, then eggs, then the remaining ingredients 4. Pour into a greased (use butter, not Pam) muffin tray 5. Bake for 13-15min (until you can poke with a toothpick and it comes out clean)
